Almond Butter Cookies
2C flour
1tsp Baking Powder
¼ tsp salt
1C Butter
(room temperature)
1C sugar
2 egg yolks (save the white to make meringue
cookies-yum)
½ tsp lemon
extract
¾ tsp vanilla
¾ tsp almond extract
Heat oven to 350˚F
Mix extracts together. Sift flour – measure and sift again with
baking powder and salt. Cream the butter and sugar until fluffy. Add yolks one at a time blend well. Gradually add the blended
extracts. Mix well. Roll into 1” balls. Place on ungreased
cookie sheet 2” apart. Gently press an x w/ fork dipped in water to prevent sticking.
Bake 15 min until edges are golden.
